Making the Drinks

These seasonal cocktails (NA variety included) feature Casamara Club’s Alta — a spritzy, alcohol free take on quintessential Italian aperitifs. Alta’s intense, pink citrus bite is balanced with fresh and fruity spice notes perfect for the holidays.

Alta Americano
  • 1 oz Sweet Vermouth
  • 1 oz Aperitif (Campari is great)
  • 4 oz Sparkling Citrus Soda
  • Tall Glass With Ice
  1. Pour ingredients over ice in a tall glass or wine glass.
  2. Express an orange peel over the top of the glass.
  3. Garnish with the orange peel.
Alta & Bitters (NA)
  • 4 oz Sparkling Citrus Soda
  • 6 dashes Orange Bitters
  • Tall Glass With Ice
  1. Pour ingredients over ice in a tall glass or wine glass.
  2. Express an orange peel over the top of the glass.
  3. Garnish with the orange peel.

Skip the booze and bitters altogether and enjoy this crisp beverage straight!

Making the Dish

Dating back nearly 600 years, risotto is a signature Italian rice dish known for its creamy consistency and versatile ability to amplify the flavors of other ingredients. Featuring morel mushrooms, this risotto’s earthy and nutty profile is something everyone can enjoy.

Morel Risotto
  • 10” Shallow Sautee Pan
  • Stirring Spoon
  • Cheese Grater
  • 2 Cups Arborio Rice
  • 0.5 oz Dried Morels
  • 6 oz Parmigiano, Grated
  • 1 Clove Garlic, Minced
  • Salt
  • 1/2 Cup Warm Water
  • 2 Tbsp Cooking Oil
  • 1/2 Cup White Wine
  • 5 1/2 Cups Chicken Stock
  1. Rehydrate morels by soaking in warm water in separate dish. Set aside.
  2. Bring pan to medium heat, adding cooking oil when warm (~90 sec.)
  3. Add rice and gently stir until rice begins to sizzle and pop. Then, add garlic and stir until fragrant (~30 sec.)
  1. Add wine and stir continuously until moisture is nearly absorbed. Expect some steam!
  2. Next, add 1/3 chicken stock and stir continuosly until moisture is nearly absorbed. Repeat twice more, adding 1/3 stock at each interval.
  1. Taste rice for doneness—can be as al dente as you like. Stir in morels. Then slowly stir in parmigiano (save some to garnish).
  2. Remove from heat, salt to taste, portion into bowls or onto plates, garnish with cheese and enjoy!
